- 1 x 400g tin butter beans, drained
- 1/2 cup caster sugar
- 1/2 cup brown sugar
- 1/2 cup cocoa powder
- 1/2 cup almond flour / ground almonds
- 1 pinch salt
- 4 eggs
- 125 g butter, cubed
- 100 g dark chocolate, broken into pieces or chocolate chips
- For the miso salted caramel
- 110 g (1/2 cup) caster sugar
- 50 g butter, cubed
- 1 tbsp white miso paste

- To make the miso salted caramel, put the sugar in a non-stick frying pan over a medium high heat. Swirl the pan occasionally to help the sugar dissolve.
Note: I used v old sugar so there were some lumps that didn't dissolve. It's not the end of the world as you're baking into brownies, but be warned if you want a very smooth caramel.
- Once the sugar dissolves, turn the heat up and cook until a light golden brown colour.
- Now quickly whisk in the butter. The mixture will froth and bubble. Keep going until the butter is incorporated.



- Next, whisk in the miso paste.

- Whisk until smooth, then remove from the heat and cool.

- Preheat the oven to 180C.
- Make the brownie mixture. Put butter beans, sugars, almond flour, cocoa powder, eggs and a pinch of salt into a food processor.

- Melt the butter and chocolate by placing in a bowl over a saucepan of boiling water. Stir with a wooden spoon until smooth.

- Add the melted chocolate to the food processor and blitz until smooth.

- Grease and line a baking tin with greaseproof paper.
- Pour in half the brownie mixture, then swirl in the cooled salted caramel.

- Pour the rest of the brownie mix on top.

- Place in the oven for 40 minutes or until the top has formed a crust, and you have lovely caramelly edges, but the inside is still sticky and slightly underdone when you stick a knife in.
Leave to cool, then eat.
